About This Brew

Moroccan spiced coffee (qahwa bil bharat) reflects the country's love of warming spice blends. Strong coffee is infused with a fragrant mix that can include cinnamon, cardamom, ginger, nutmeg, clove, black pepper and even a touch of sesame, depending on the household. The spices may be ground directly into the coffee or steeped in the brew.

The result is aromatic and complex, the bitterness of the coffee softened and lifted by layers of sweet-warm spice. Served sweet and often with a little milk, it is the kind of coffee that perfumes an entire room. Each family guards its own ras el hanout-style coffee spice blend, making no two cups quite the same.

Ingredients

  • 2 tbsp finely ground dark-roast coffee
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/8 tsp ground ginger
  • Pinch each of nutmeg, clove and black pepper
  • Sugar, to taste
  • Hot water; milk (optional)

Equipment Needed

  • Small pot or stovetop coffee pot
  • Fine strainer
  • Cup

Instructions

  1. Combine the ground coffee and all spices.
  2. Add to a small pot with water and bring almost to a boil over low heat.
  3. Simmer gently for 2-3 minutes to infuse.
  4. Strain into a cup.
  5. Sweeten to taste and add a splash of warm milk if desired; serve hot.
