About This Brew

Kopi Tubruk is Indonesia's rustic, no-equipment coffee: coarsely ground beans and sugar simply dumped into a glass and drowned in boiling water. The name comes from 'tubruk', meaning 'to collide', a nod to the rough-and-ready way grounds and water crash together. It is the daily coffee of Java and Bali, often made with robusta and famously thick.

The grounds are left to sink to the bottom, and the coffee is sipped from the top, growing stronger as you go and never quite finished: you stop before reaching the muddy sediment. The flavour is bold, earthy and intensely sweet, with a heavy body and the unmistakable character of Indonesian robusta. Some versions add a cinnamon stick or a slice of ginger for warmth.

Ingredients

  • 1-2 tbsp coarsely ground Indonesian robusta (or dark roast)
  • 1-2 tsp sugar
  • Boiling water
  • Cinnamon stick or ginger slice (optional)

Equipment Needed

  • Heatproof glass
  • Spoon
  • Kettle

Instructions

  1. Add the ground coffee and sugar directly to a heatproof glass.
  2. Pour in boiling water and stir well.
  3. Add a cinnamon stick or ginger slice if desired.
  4. Let the grounds settle for 3-4 minutes.
  5. Sip from the top, leaving the sediment at the bottom.
