About This Brew
Es Kopi Susu (iced milk coffee) is the drink that fuelled Indonesia's third-wave café boom. The modern 'kopi susu kekinian' (today's milk coffee) layers a shot of strong espresso or robusta brew over fresh milk and a generous drizzle of palm-sugar syrup (gula aren), served tall over ice.
Gula aren is the soul of the drink: a dark, smoky-sweet palm sugar that caramelises against the bold robusta and rounds out the milk into something mellow and moreish. Unlike the heavy condensed-milk classics, es kopi susu feels lighter and fresher, which is exactly why it became the signature order of a generation of Indonesian coffee shops.
Ingredients
- 2 shots espresso or strong brewed robusta
- 120ml fresh milk
- 2 tbsp palm sugar (gula aren) syrup
- 1 glass of ice
Equipment Needed
- Espresso machine or moka pot/phin
- Tall glass
- Spoon
Instructions
- Drizzle the palm sugar syrup around the inside of a tall glass.
- Fill the glass with ice.
- Pour in the fresh milk.
- Brew the espresso or strong coffee and pour it over the top.
- Serve unstirred for the layered look; stir before drinking.
